Drum Restaurant Hero

Long term friends and now business partners Nick Pinn (Malt Dining and Vaquero) and Paul Hoffmann (ex Executive Chef Cru Bar and Sixes & Sevens) have come together to open Drum in Unison at Waterfront, Newstead.


Paul will be focused on putting together a team of passionate chefs and creating an accessible menu of modern, clean & uncomplicated flavours with European influences.  Nick will be overseeing the front of house management team and developing an interesting and unique beverage offering at this new local meeting house situated on the ground floor of Mirvac's newest development "Unison".

The design, headed up by local Wooloongabba design team "Curious Us" incorporates a mixture of quality, luxury and surprise elements with a range of handmade, locally produced and imported materials.  While the look and feel may appear to be quite luxe, the offering will be 100% approachable in all aspects from the food and beverage offering to the service provided.  Paul and Nick know there is no place for attitude or ego in this industry and will be nurturing a service team that cares.  Their passion for hospitality will be evident and at the forefront and focused directly at the customer.

Drum is about feel and movement, the rhythm of the kitchen working together with the bar to deliver a seamless experience for customers.

Drum is a place where you can feel comfortable at any time of the day or night.  The kitchen and bar will be open all day.  Whether you just want to pop in for a drink and perhaps some cheese, linger over a long lunch or dinner, celebrate a special occasion or have an impromptu catch up with friends, you will always feel welcome.

If you love great food, quality wine and friendly faces then Drum is your favourite pair of pyjamas on the couch when you're not at home.
